Ingredients
- Water to cook GF pasta
- 8 ounces uncooked GF pasta of choice
- GF pasta sauce of choice
- 1 cup GF breadcrumbs – use about 3 inches of a loaf of choice
- 3/4 cup Parmesan of choice
- 1 teaspoon Italian seasoning (Frontier®)
- 4 split boneless, skinless chicken breasts, or pork cutlets pounded thin
- 1/2 cup pure olive oil, or palm oil, or coconut oil, or butter of choice
- 1 teaspoon garlic powder, or 2 teaspoons minced garlic
- 1 tablespoon 100% pure organic lemon juice (optional)
Method
- Place baking rack in first position; preheat oven to 425°F; line baking sheet with parchment paper; set aside.
- Fill a large pot 3/4-full with water; bring to boil; add GF pasta of choice and prepare to desired tenderness; drain; rinse; shake off excess water; set aside.
- Heat pasta sauce in small saucepan set over medium-low heat; stir occasionally.
- Meanwhile, using a food processor or blender, grind GF bread into fine crumbs; add Parmesan of choice and Italian seasoning; pulse to combine; pour breading mix into shallow bowl.
- Wash and dry chicken breasts; butterfly each breast.
- In shallow bowl, whisk together pure olive oil, garlic powder, and lemon juice.
- Working from left to right, place chicken in oil mix; coat entire breast; lay oiled chicken into breading mix; press down on chicken to adhere coating, turn over and press down to adhere coating to other side; lay on prepared baking sheet; prepare remaining chicken in same manner.
- Place baking sheet in preheated 425°F oven; bake 12 minutes.
- Remove baking sheet from oven; flip tenders over; return sheet to oven; bake 12 minutes.
Serve alongside prepared noodles and sauce. Also, pour sauce over chicken; cut chicken into small strips when serving to children. Servings: 4. Preheat: 425°F. Prep Time: 15 minutes. Cooking Time: 24 minutes.
To freeze: prepare through step 7; wrap sheet tightly in plastic; freeze until solid, about 2 hours; remove to plastic freezer bag; store frozen up to 3 months.
To prepare frozen cutlets: remove desired amount from freezer; place on parchment-lined baking sheet; place sheet in preheated 425°F oven; bake 15 minutes, flip, bake 15 minutes.
Note
Palm oil (the healthiest oil that one can consume) contains high amounts of beta-carotene – hence its strong orange-yellow-red color – this oil will tint the goods in which it is used.
