Baked Beans

So much easier to make than one would think – these simple baked beans are nice served alongside mashed potatoes and meatloaf.

Ingredients

  • Palm shortening for baking dish, or lard
  • 6 slices uncured pork or turkey bacon (Applegate Farms®), or diced Pancetta
  • 30 ounces (2 cans) rinsed and drained pinto beans, or bean of choice
  • 1/4 cup GF ketchup
  • 1/4 cup agave nectar, or light brown sugar, or Grade B Maple syrup, or honey, or simple syrup
  • 1 tablespoon GF Dijon mustard, or GF mustard of choice
  • 1 small diced onion, or 2 tablespoons onion flakes
  • GF chicken broth, or broth of choice, as needed while cooking

Method

  1. Place baking rack in third position; preheat oven to 375°F; using lard or palm shortening, heavily grease deep baking dish or cast iron skillet (with lid); set aside.
  2. Place a large skillet over medium-high heat; add 6 slices bacon or diced Pancetta; cook until crisp and fat has been rendered; drain bacon on paper towels; break into pieces; set aside.
  3. Place colander in sink; add canned beans; drain; thoroughly rinse beans with cool water; drain; add to mixing bowl.
  4. Add crumbled bacon; stir in ketchup, agave nectar, GF Dijon mustard, and onion; mix well.
  5. Pour bean mixture into prepared baking dish; cover tightly with foil or lid.
  6. Place into preheated 375°F oven; bake 30 minutes; remove from oven and stir. If beans appear too dry, add up to 1 cup GF chicken broth; cover with foil or lid; return to oven; bake 30 minutes.
  7. Remove from oven; remove cover; stir. If beans appear too dry, add more GF broth, as needed, to thin sauce to desired consistency; return uncovered dish to oven; bake 15 minutes; remove from oven; scoop into serving bowl.

Serve immediately. Servings: about 5 cups. Preheat: 375°F. Prep Time: 10 minutes. Cooking Time: 1 hour.

To freeze: set aside to cool completely; scoop beans into storage container or plastic freezer bag; freeze up to 2 months.

To prepare frozen baked beans: place beans in refrigerator to thaw; turn beans out into saucepan; add 1/4 cup GF broth of choice; bring to simmer; cook until heated through; serve immediately.
