Ingredients
- 2 cups GF rolled oats, divided; OR quinoa flakes, or brown rice flakes
- 1 cup brown rice flour, or millet flour, or sorghum flour, or buckwheat flour, or sweet rice flour
- 1 cup tapioca starch, or potato starch, or cornstarch
- 1/4 cup packed light brown sugar, or cane sugar, or granulated sweetener of choice (not stevia)
- 1 tablespoon baking powder
- 1 teaspoon sea salt
- 1/2 teaspoon ground cinnamon
- 2 cups milk of choice, or water
- 1/2 cup unsweetened applesauce
- 1/4 cup (plus more for pan) pure olive oil, or coconut oil, or palm oil, or butter of choice
Method
- In bowl of food processor, combine brown rice flour, tapioca starch, light brown sugar, baking powder, sea salt, ground cinnamon, and 1 cup GF oats; pulse a few times to coarsely grind oats.
- In large bowl, whisk together milk of choice, applesauce, and pure olive oil.
- Add dry ingredients to bowl along with remaining 1 cup GF oats; whisk just until moistened.
- Place a large skillet over medium heat; add 2 tablespoons pure olive oil.
- Drop 2 – 3 tablespoons batter per onto heated skillet; cook until bubbles form and burst, 1 – 2 minutes.
- Flip pancakes; cook until browned on both sides, 1 – 2 minutes.
- Repeat with more oil and batter, until all batter has been used.
Serve immediately, or cool completely on wire rack; store in airtight container in refrigerator up to 2 days. Servings: 20 pancakes. Preheat: 375°F. Prep Time: 10 minutes. Cooking Time: 25 minutes.
Or, cool then wrap individually in plastic (or place parchment paper between pancakes), place in plastic freezer bag; freeze up to 1 month; toast to reheat.
Variation
To use egg: omit unsweetened applesauce; beat 2 large eggs in during step 2.
To use DariFree™ powder (Vance’s®) as milk choice: add 1/2 cup DariFree™ powder (Vance’s®) during step 1; replace milk of choice with water.
