Chili
Ingredients
- 30 ounces (3 cups) Cannellini (white kidney) beans, rinsed and drained, or Navy beans, or cubed cooked rutabaga, divided
- 3 tablespoons pure olive oil, or coconut oil, or palm oil, or butter of choice
- 1 medium organic onion, diced
- 2 medium carrots, diced
- 2 medium organic celery ribs, diced
- 2 large garlic cloves, minced, or 1 tablespoon garlic powder
- Sea salt and fresh ground black pepper
- 1 teaspoon chili powder, or paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano, or Italian seasoning (Frontier®)
- 1/8 teaspoon ground sage
- 1 cup GF broth of choice or water
- 2 cups organic crushed tomatoes do not drain
Garnish
Ingredients
- Cheddar Cheese and/or Tangy Jack, shredded or chopped
- Sour Cream
- Minced fresh cilantro, or dried cilantro
Method
- Place 1-1/2 cups rinsed and drained beans into bowl; mash with fork; set aside.
- Place large saucepan over medium-low heat; add 2 tablespoons pure olive oil; heat oil.
- Add diced onion, carrots, celery, and minced garlic; sprinkle on sea salt and black pepper to taste; cook until vegetables are tender, about 10 minutes.
- Add chili powder, ground cumin, oregano, and sage; stir; cook 3 minutes.
- Stir in GF broth; bring to boil; add crushed tomatoes with liquid and mashed beans; stir to combine; bring to boil.
- Reduce heat; place on lid; simmer 30 minutes; stir occasionally.
- Stir in remaining 1-1/2 cups beans; place on lid; bring to simmer; cook 10 minutes.
Pour chili into large serving bowl; place in separate bowls: shredded cheese(s), Sour Cream, and minced cilantro; pass at table as garnish. Servings: 4. Prep Time: 20 minutes. Cooking Time: 45 minutes.
Variation
For a heartier chili: cut 1 pound meat into half-inch dice, such as pork cutlets, or chicken breast or thigh, or turkey breast, or beef cubes, or bison cubes; place heavy-bottomed skillet over medium high heat; add pure olive oil or coconut oil; cook meat until browned, stirring frequently, about 6 minutes; add cooked meat to chili during step 5; increase cooking time to 45 minutes during step 6.
