Mustard

This basic mustard is quite mild – add just about any spice or chili powder you like to change its flavor. Experiment and you may create a unique family favorite!

Ingredients

  • 1/3 cup mustard powder
  • 1/3 cup hot water
  • pinch of turmeric (optional for coloring)

Method

  1. In small bowl, whisk together mustard powder and water; whisk until smooth; set aside.
  2. Rest at room temperature for at least 2 hours, to develop flavors.

Scoop into storage container; refrigerate up to 1 month. Servings: 1/4 cup. Prep Time: 5 minutes.

Note

Using fresh mustard seeds: mustard seeds must be soaked – in unheated water – or an enzyme will be released that ruins the seeds’ flavor; drain seeds from water; measure 1/2 cup mustard seeds into grinder; grind into powder; use immediately.

Grainy mustard: Soak 2 tablespoons mustard seed in water for at least 2 hours, but preferably overnight; drain off water; add during step 1, along with 1 tablespoon apple cider vinegar.

Honey mustard: during step 1, add 2 teaspoons honey, or agave nectar, or simple syrup, or Grade B Maple syrup.

Dilled mustard: during step 1, add 1 tablespoon fresh minced dill weed, or 1 teaspoon dried dill weed.

Do not expect homemade mustard to be bright yellow in appearance – this can be achieved by adding a touch of turmeric at the very end of step 1.
